Almost every single time that I walk into my parents house there is some type of baked good that my mom had made that day. Everyone who knows her knows her for her extraordinary baking skills, her fun up-beat personality, and her amazing parties. She is one of a kind. Just like her baking skills. These muffins are no exception for her amazingness. I actually had to hid them in the laundry room so that my husband and kids would not eat them. So when my baby was sleeping and my boys were at school I sat down and enjoyed every single bite of them! They are the perfect “fall” muffin!
 

Pumpkin Oat Muffins Recipe

 

Pumpkin Oat Muffins

Pumpkin Oat Muffins

Ingredients

  • 2 1/2 cups flour
  • 4 teaspoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup oats
  • 1 1/2 cup pumpkin puree
  • 1 cup brown sugar
  • 1 cup white sugar
  • 2/3 c vegetable oil
  • 1/2 cup applesauce
  • 3 eggs
  • 1 teaspoon vanilla
  • 1/2 cup brown sugar
  • 4 Tablespoons butter,softened
  • 4 Tablespoons oats
  • 4 Tablespoons flour

Instructions

  1. Preheat oven to 375 degrees F. In a large mixing bowl alternate adding wet and dry ingredients until combined. Fill cupcake tins 2/3rds way full.

 

Ingredients

 
Sift:
  • 2 1/2 cups flour
  • 4 teaspoons pumpkin pie spice
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup oats

Instructions

Mix in a large bowl everything except the oats, then once mixed slowly put them in. Set aside.

Ingredients

 
Combined in a bowl:
  • 1 1/2 cup pumpkin puree
  • 1 cup brown sugar
  • 2/3 c vegetable oil
  • 1 cup white sugar
  • 1/2 cup applesauce
  • 3 eggs
  • 1 teaspoon vanilla

Instructions

Preheat oven to 375 degrees F. In a large mixing bowl alternate adding wet and dry ingredients until combined. Fill cupcake tins 2/3rds way full.

Ingredients

Streusel:

  • 4 Tablespoons butter, softened
  • 1/2 cup brown sugar
  • 4 Tablespoons oats
  • 4 Tablespoons flour

Instructions

Combined in a bowl. Add about 1 1/2 Tablespoons of streusel to the top of each cupcake tin. Then bake for 20 minutes.

Pumpkin Oat Muffins

Ingredients

  • 2 1/2 cups flour
  • 4 t pumpkin pie spice
  • 2 t baking soda
  • 1 t baking powder
  • 1 t salt
  • 1/2 cup oats
  • 1 14.5 oz can pumpkin
  • 1 cup brown sugar
  • 2/3 cup oil
  • 1 cup sugar
  • 1/2 cup applesauce
  • 3 eggs
  • 1 t vanilla

streusel topping

  • 4 T butter cut into small cubes
  • 1/2 cup brown sugar
  • 4 T oats
  • 4 T flour

Instructions

  1. Preheat oven to 375 degrees F. In one bowl combined the dry ingredients (or the first 6 ingredients). Then in a different bowl combine the rest of the ingredients. Then slowly alternating between the dry and wet ingredients combined them. Grab muffin tin and either line or spray with cookie spray. Then fill the muffins 2/3rds full. Then top with a Tablespoon of the streusel topping. Then bake for 20 minutes. 

Streusel topping

  1. In a bowl combined the topping. Clump the butter together until it makes a crumbly topping! Then top the muffins with a tablespoon of the mixture before baking
