Hawaiian Haystacks

If someone asked me to name a few meals that reminded me of my childhood this would be one of them! In fact my older brother, Stetson asks for this meal almost every year for his "birthday meal" that my mom cooks. And being that I am headed to Hawaii next week I only thought that it would be fitting to fix this meal before we head off! The best thing about this meal is that it is so versatile. This plate in the picture would be mine: layered cheese, tomatoes, pineapple, mandarin oranges, lots of coconut, slivered almonds,Chinese noodles, and sour cream all sprinkled with salt and pepper! My boys like just cheese and Chinese noodles and sometimes my oldest will add a couple of tomatoes. The possibilities are endless! 

Hawaiian Haystacks

Whole chicken
1 (heaping) Tablespoon garlic, minced
Cream of chicken soup, family size
1 Tablespoon parsley, dried or fresh will work
1 pint sour cream
1 teaspoon pepper

celery, diced
green onion, chopped
carrots, chopped
pineapple chunks
mandarin oranges
tomatoes, diced
grated cheddar cheese
Chinese noodles
almonds,sliced or slivered
sweet shredded coconut

Boil chicken in water and add garlic. Remove chicken, shred and set aside. Save 2 cups of the stock! In a saucepan add your soup, chicken stock, parsley, and pepper. When it is smooth stir in sour cream and then add chicken in.  Cook rice according to directions on package. 

To assemble: Put rice on the plate, sprinkle a little cheese, add sauce, sprinkle more cheese, then add whatever toppings you like! Serve with a dollop of sour cream and salt and pepper!

* These can be made as simple or complex as you like them or with whatever you had on hand! They are just as good with just the rice, sauce, and cheese!

Easy Crowd Pleasin' Chicken

Some nights I want to put as little effort into the main dish as possible. This is one of my go-to easy chicken meals that everyone loves each and every time that I make it. Also bonus is that I usually have all these ingredients in my kitchen so it makes it even easy for those crazy busy days! It will feel a little sketchy when you are mixing the ingredients together because they are definitely some random ingredients but when you smell it cooking and then taste it you will make it over and over again!

Easy Crowd Pleasin' Chicken
yeilds:4 servings

4 chicken breasts
salt and pepper
1 Tablespoon red wine vinegar
1/2 cup Dijon mustard
1/4 cup maple syrup or  all natural maple syrup

Preheat oven to 400 degrees F. Place chicken in a 9x13 metal baking dish. Season with salt and pepper. In a small bowl mix together vinegar, mustard and syrup. Then pour oven chicken. Lightly sprinkle with rosemary and bake for 35-45 minutes (depending on the thickness of your chicken)

Copy-Cat Red Lobster Cheddar Biscuits

I have really been on a bread kick lately. And these were at the top of the list for my family. But most importantly my husband. He LOVED these! I served them with salmon with lemon slices, and asparagus. It was a easy weekday meal! They all just went perfectly together and we topped off the night with oreo milkshakes! If you are not much of a bread maker this is the perfect recipe to start with!

Copy-Cat Red Lobster Cheddar Biscuits
yields:12-15 biscuits

2 1/2 cups Bisquick
4 Tablespoons cold butter, cut into small cubes
1/4 teaspoon garlic powder
1 cup cheddar cheese, shredded
3/4 cup milk

3 Tablespoons butter
1/2 teaspoon garlic powder
3/4 teaspoon dried parsley flakes
kosher salt

Preheat oven to 400 degrees F. Line cookie sheet with parchment paper. In a medium size bowl pour bisquick. Cut in cold butter by using a pastry cutter or a fork or two. Combined it. There will be small chunks and that is fine. Mix in the garlic powder and cheese and then add milk slowly while mixing together with your hands. Add a little more milk if the dough feels dry but don't add too much!!! Drop about a 1/4 cup portions of the dough on the cookie sheet. Bake for 14-16 minutes or until biscuits are light brown.

Place butter in a microwave safe bowl and melt for about 1 minute or until it is all melted. Then add the garlic powder and parsley flakes. Right when the biscuits are done from the oven brush the glaze over the biscuits and sprinkle lightly with kosher salt.

Chicken Noodle Soup + Shirley J Biscuits

I love making soups but unfortunately the look on my husbands face when he comes home from work and sees soup on the table doesn't correspond to my love for soups. So from February to October soups are not put into the weekly menu. But right when fall hits the soup recipe brainstorming begins! And that is when I start making soups once a week. I still get the same look on my husbands face every time and that is why I have starting making some type of homemade bread that day too! I have LOVED making breads recently! And when ShirleyJ sent me a fun package with some of their products they including there chicken bouillon and their biscuit mix and i knew right then that chicken noodle soup and biscuits had to be made! These biscuits were so easy and they were just as good as homemade ones! I was shocked! You all need to seriously try them! I can't wait to use them with my favorite biscuits and gravy! And this chicken noodle soup was so easy and delicious that it made for a easy meal that we all enjoyed!

Chicken Noodle Soup

3 large chicken breasts
2 teaspoons ShirleyJ chicken bouillon
2 packages egg noodles
2 carrots,sliced
2 celery stalks,sliced
3 potatoes, peeled and diced
1/2 onion, chopped
1 quart heavy whipping cream
1 quart half and half
1 teaspoon salt
1 teaspoon pepper

In a large pot boil chicken in water with the chicken bouillon. When chicken is cooked take out of the broth and let cool. Once cooled shred chicken. In the broth add the noodles, carrots, celery, onion, and potatoes. Simmer for a hour. Add chicken and continue to simmer then add the cream ad half and half. Mix it all together and it will begin to thicken. Add the salt and pepper. Taste and add more pepper or salt according to your liking.

Pair with Shirley J Biscuits (Make according to directions on package.)
