Turkey Guacamole Pita

 

Man was Thanksgiving a whirlwind..I feel like there is so much prep involved before and then you finally eat while feeling exhausted from all the prep and then you eat too much and feel sluggish from the overconsumption of food and then Black Friday comes and too much shopping and not enough sleeping occurs and then you feel like you have been hit by a train haha and that is where I am at.

One of the many good things about Thanksgiving is the leftovers. Boy are they good!!! I have paired up with Wholly Guacamole to bring you a “Love Your Leftovers” recipe featuring their yummy guacamole! Most of time when I eat Thanksgiving leftovers it consists of me plating my food almost exactly how it was on Thanksgiving day and eating it with a slice of pie of course! Then of course there is the normal turkey sandwich on a roll with a little mayo too. Well today I am going to share with you another way that I used my Thanksgiving leftovers and that was for a yummy lunch where I made a little guacamole spread and put it on a pita with some leftover turkey, lettuce, tomato, and some purple onion with a side of leftover veggie tray vegetables and Wholly guacamole mini 100 calorie cups for dipping! Such a yummy and easy lunch.

Turkey Guacamole Pita

Ingredients

  • 2 Pita Pockets
  • 1/2 cup Turkey
  • 4 tomato slices
  • 4 pieces of lettuce
  • few slices of purple onion
  • 1 100 calorie mini Wholly Guacamole cups
  • 1 Tablespoon greek yogurt
  • squirt of lemon juice
  • 1/4 teaspoon lemon zest

Instructions

    1. Take the mini guacamole cup and place in a small bowl.
    2. Add the greek yogurt and the lemon juice and lemon zest and mix well.
    3. Grab the pita pockets and place the lettuce inside. Spread the guacamole mixture in it.
    4. Add the turkey and tomato slices and purple onion. Make sure it is all in there good and then enjoy!

2 Pita Pockets
1/2 cup Turkey

squirt of lemon juice
1/4 teaspoon lemon zest
