Dessert Nachos featuring Cookie Chips



Dessert is something that happens often at our house,whether is something simple or something as deluxe as these dessert nachos. My husband and sons love them some chocolate! 

When Hannahmax sent me a fun box clear full of their delicious Cookie Chips a few ideas ran through my mind but I kept going back to this one. It took all my will power not to just sit down and eat each bag! I had to refrain myself! But after I made these dessert nachos boy was I glad that I held out! And since I had a bag of each kind I made a platter and taste tested each and every kind! They were all yummy but I think my favorite (for at least this recipe) was the chocolate chip! My boys had their favorites too but I was a fan of the chocolate chip! So next time you are looking for a fun dessert try these dessert nachos!

Dessert Nachos

Your favorite Cookie Chips ( Or you can do a couple of kinds like I did!)
Ice cream
Strawberries, sliced
Bananas, sliced
Hot fudge 
Caramel

Take a plate and add a large handful or the whole bag of cookie chips. Place a couple large scoops of ice cream. Evenly place strawberries and bananas all over. Drizzle hot fudge and caramel all over everything. Then EAT UP!

Havarti, Caramelized Onion, and Steak Quesadilla


Weekends are something to look forward to in our house. I love when my husband is home, but I think my kids love it even more! For some reason all my kids love being outside and helping him do yard work. I on the other hand can barely get them to put their dirty clothes in the hamper! I spend Saturday and Sunday cooking! Breakfast,lunch,and dinner and usually a snack and dessert too!

Last weekend we had a major cleaning day then spent the rest of the day out back. They were slip n' sliding and playing with every water toy imaginable. And yes here in Arizona the water toys make their  debut again in February! After the water day I whipped up some fresh squeezed lemonade and these quesadillas. And they sure hit the spot!


Havarti, Caramelized, and Steak Quesadilla

Thin cut steak, grilled and thinly sliced
7 ounces Havarti Cheese
1 Medium onion, thinly sliced
2 Tablespoons butter
1/4 cup of your favorite BBQ sauce
Pasta Sauce
Tortillas
Butter

In a pan add 2 Tablespoons of butter and then the thinly sliced onion. Sauté until the onions begin to caramelize. Once they become translucent add the cooked and sliced steak to the onions. Add the BBQ sauce and mix together. On a flat skillet add a little butter and then place a tortilla on it (I love to use the tortillas that you have to cook) on 1 side of the tortilla spread some pasta sauce on it then add the steak/onion mixture and then place 2 or 3 slices of havarti cheese on it. Fold it over. Once that side of the tortilla starts to lightly brown flip it. If the tortilla is starting to brown faster then the cheese is melting turn down the heat and let it cook slower.


*And of course its almost impossible sometimes to get a picture without one of my kids {or husband} trying to grab the food*

Southern Deep Fried Fish


A few weeks ago I was able to get away with my husband for a week and travel to Hawaii. It was a dream and so relaxing! We ate out for every single meal and truly lived it up! One of the nights we went to a place in Maui called Monkeypod Kitchen and one of the things we ordered was the Fish n' Chips. We absolutely loved it there until we realized that my husband forgot his wallet back in the hotel room! He was shocked and embarrassed and I just sat there and laughed. Luckily I have my debit card info memorized and so we were able to get it all paid for. But in the end my husband was even more scared that I had my debit card info all memorized! I guess I may do a little too much online shopping! haha but shoot at least I was able to get our dinner all paid for before we left!

So back to the fish…ever since I got home I have wanted to make some deep fried fish. So one day I whipped it up for my family. My 3 year old saw what I was making and demanded mac n cheese. So as the fish were frying I made him mac n cheese. Well as we sat down at the table my husband and I took the fish and the 3 kids took mac n cheese. The rule in our house is that you at least have to "try" what mom makes and then if you don't like it you can just eat the side dishes. My oldest tried it, loved it, scooped all the mac n cheese off his plate, and filled the remainder of his plate with more fish! And finished off my saying "I'm pretty sure fish is my favorite food now." WIN! My middle son tried the fish ended up liking it! He ate about half of a filet of fish and topped it off with his original side of mac n cheese. My baby girl ate up all her fish and could not get enough! So all in all this was a WIN in our house!

Deep Fried Fish

4 filets of halibut, flounder, or cod
1 cup flour
1 cup water
1 teaspoon baking powder
1 Tablespoon vinegar
salt
pepper
vegetable oil for frying

Grab filets and salt and pepper them on both sides. In a baking dish combined flour, water, baking powder, and vinegar. Whisk it all together. In a frying pan place oil until it is about 1 inch deep on medium heat. Heat up and test by dropping a little bit of the batter in it to see that it starts bubbling and frying it. When that is ready take each piece of fish and coat on both sides with the batter, then place in oil and begin to fry. Deep fry until golden brown on each side. Mine took about 7 minutes on each sides. (This time will depend on how hot your oil is) Place some paper towels down and once fish is all finished put the fish on the paper towels and cover with more paper towels and pat off grease. Serve with tarter sauce or ketchup is what my kids did!

Sugar Cookies


There is nothing that says "I love you" more in our house than freshly baked sugar cookies! My husband absolutely loves sugar cookies! I also think that my husband would say nothing is more sexy then watching my wife make sugar cookies haha. So you can tell in our home if there was 1 thing that I could make for my husband for Valentine's Day that would make him happy sugar cookies is where it is at!

These cookies were made for me when I was a little girl over and over again. I would say that my mom is definitely a sugar cookie expert. And in the past couple of years I have spent countless hours in the kitchen with my mom learning every cooking skill imaginable and in fact trying to master the art of sugar cookie making! I personally think that a good sugar cookie is hard to come by! The thickness has to be right, they need to be as soft as possible without falling apart, and there has to be the perfect amount of frosting and sprinkles on top to top it off! As you can tell I take sugar cookies very serious haha. And if these cookies are made right they are just that!


Sugar Cookies

1/2 cup butter, softened
1/2 cup crisco
1/2 cup powdered sugar
1/2 cup sugar
1 egg, room temperature
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon cream of tartar
2 1/4 cup flour

Cream together butter, crisco, powdered sugar and sugar until fluffy. Add in egg and vanilla. Whip together and scrap the sides and whip together. In a sifter, place flour, baking soda, and cream of tarter. Place sifter over wet ingredients and sift. Turn on mixer and continue to mix until all dry ingredients are added. Cover and place in refrigerator for at least a hour. Once chilled, on a floured surface place 1/2 of dough and roll out. Start in the center and go to the edge and then the center to the other edge. Switch directions and roll out until the width is about the size of your pinky. Use any cookie cutter to cut. Depending on the size of the cookie cutter depends on how many can fit on a cookie sheet. I lined mine with parchment paper. Repeat the roll out process until all dough is used! Bake at 350 degrees F for 6 to 8 minutes. Watch them closely and remove just when the shininess of the dough is gone. Let them sit on the cookie sheet for about 5 minutes and then transfer to a cooling rack. You can then frost them once they are cooled or I like to freeze them and then frost them just before we are ready to eat them. When you freeze them they become really easy to frost and once they are thawed they are moist and so yummy!

Frosting:

1/2 cup butter, softened
1 teaspoon vanilla
1 pound powdered sugar
Whole Milk, to thin

Combine ingredients. Add milk slowly until the right constancy.  If you accidentally add too much milk add a little more powdered sugar.

Dark Chocolate Dreams Peanut Butter Bites



Congrats to RACHEL WANG! You won the Dark Chocolate Dreams Set Giveaway!!! And just because I love Dark Chocolate Dreams so much I decided to share another recipe using it! These little bites are the perfect after school snack! Or any snack or dessert for that matter! You can never go wrong with anything filled with Dark Chocolate Dreams! Especially when its little bite sized peanut butter cookies! Enjoy!

Dark Chocolate Dreams Peanut Butter Bites

1/2 cup butter, softened
1/2 cup brown sugar
1/2 cup sugar
1 egg, room temperature
1/2 cup peanut butter, smooth operator is our favorite!
1/2 teaspoon vanilla
1 1/4 cup flour, sifted
3/4 teaspoon baking soda
1/2 teaspoon salt
1 (16oz) jar of dark chocolate dreams

Combine butter, sugars, eggs, and vanilla, and peanut butter. Beat until smooth. Add in dry ingredients and chill for 1 hour. When cold, roll in small balls and place in greased miniature muffin tins. Bake at 375 degrees F for 8 to 9 minutes or until cookies slightly begin to brown. Once out of the oven using your finger or the end of a kitchen tool or small shot glass, lightly press down on the cookies to create a little hole. Fill each hole with a heaping teaspoon of Dark Chocolate Dreams. It will start to melt quick so then you can swirl it around and make sure it is smooth and even. Let cool and then enjoy! Store in a airtight container or you can even freeze them!

Dark Chocolate Dreams Swirled Blondies + a GIVEAWAY

I could not wait to start cooking! And so that is exactly what I did! To say that this company has stollen my heart would be an understatement! I use their peanut butters daily for my post workout shakes, pb&j's for my kids, or in recipes!

Dark Chocolate Dreams Swirled Blondies

1 1/2 cups light brown sugar
3/4 cups unsalted butter,melted
2 large eggs
1 teaspoon vanilla extract
1 1.2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt

Preheat oven to 350 degrees F and spray a 8x8 inch baking dish with nonstick cooking spray. In a mixing bowl whisk brown sugar,butter,eggs,and vanilla extract until well combined. In a separate mixing bowl, combine the flour, baking powder, baking soda, and salt. Add the flour mixture to the wet ingredients and beat until just combined. Spread the batter into the prepared baking dish. Spoon dollops of the Dark Chocolate Dreams peanut butter over the top of the blondie batter in the baking dish and use the tip of a knife to swirl together. Bake for 30 minutes or until the center begins to puff up and edges brown. Let cool for 30 minutes before cutter into 9 squares. Store in a airtight container for up to 1 week.
