Southwest Chicken Wraps


It is getting hot fast here in Arizona! The thought of turning on my oven for a hour to cook dinner is haunting me. So I have decided to use the grill and crockpot as much as possible this summer. These chicken wraps were just that! I threw the ingredients in a crockpot and grabbed a Toufayan wholesome wheat wrap and had a easy and yummy dinner for my family!

Southwest Chicken Wrap

1 small bag frozen corn
2 large frozen chicken breasts, boneless and skinless
1 can black beans, rinsed and drained
1 (16 oz) jar medium salsa
shredded cheese
Optional:
sour cream
avocado, diced
tomatoes, diced
chopped cilantro 

Grab a crockpot. Pour bag of frozen corn on bottom, then chicken, then black beans, then top with salsa. Cook on low for 4 hours. Shred chicken. Grab tortilla sprinkle some cheese on it. Melt cheese in oven or microwave. Take a heaping scoop of the southwest chicken mix and then cover with more cheese, sour cream, avocado, tomatoes, cilantro, more salsa or whatever sounds good to you. Roll up and serve! 

*This dish is also great just served with tortilla chips or make deluxe nachos with them!*

Crockpot Buffalo Chicken Dip


I am the biggest buffalo fan you will ever meet! I love it on anything and everything! So when my mom made this dip for our "Oscar's" party I had to have the recipe! She has made it a few times since then and it never disappoints! And bonus is that it is in a crockpot! I feel like when you are throwing a party or something it is always good to throw in a good yummy crockpot recipe that doesn't take too much time when you are trying to get everything else done! 

Crockpot Buffalo Chicken Dip

3 Tablespoons butter
1 cup Franks Hot sauce
16 ounces cream cheese, softened
2 cups cooked rotisserie chicken, shredded
1 cup blue cheese crumbles
1 cup Mozzarella cheese, shredded
Baguettes, tortilla chips, carrots, celery, pretzels, etc. for dipping 

In a small pot over medium heat melt butter. Then whisk in hot sauce. Set aside. Grab a crockpot add cream cheese, then chicken, pour hot sauce mixture over, place in blue cheese crumbles, and top with mozzarella. Cook on low for 2 hours or high for 1 hour. Serve with your choice of Baguettes, tortilla chips, carrots, celery or pretzels.

"The Bee's Knees" Snickers Cookies + Giveaway



The other day I made these cookies for a friend that just had a baby and then took the rest of them to my cousin's college graduation party. They were a hit with everyone! The surprise in the center is what makes these cookies fun and different! My kids obviously loved them too!


These cookies also feature my favorite brand of peanut butter Peanut Butter & Co. Every single time I receive a package from them I am so excited! Their brand has become a staple in our home! I love being part of their "Yum Squad." And one of the benefits of being part of that is that I also have the opportunity to give away a lot of their jars of peanut butter! And this time the giveaway is for 2 jars of their Bee's Knees Peanut Butter it is a all-natural peanut butter blended with scrumptious honey!






"The Bee's Knees" Snickers Cookies

1 cup butter, softened
1 cup sugar
1 cup brown sugar
1 cup The Bee's Knees peanut butter
2 teaspoons vanilla
2 eggs
3 cups flour
1 teaspoon baking powder
1 teaspoon baking soda

Cream butter, sugar, brown sugar, and peanut butter; add the vanilla and eggs. In a separate bowl mix together dry ingredients. Add dry to wet. Take 1 heaping tablespoon of dough, flatten, and put mini snickers inside, fold over and form into a ball, completely covering snickers. 
Bake at 350 degrees F on a ungreased cookie sheet for 10-12 minutes. Don't over bake! Mix together glaze ingredients and drizzle glaze over baked cookies.

Glaze:
1 cup powdered sugar
2 Tablespoons Dark Chocolate Dreams
2 Tablespoons milk (slowly add a Tablespoon at a time)

Cheesy Chicken Bundles


When I started to make dinner the other night this is not what I had in mind. It started as just panko crusted chicken parmesan with a side spinach salad. I decided to have a little fun with these chicken bundles and threw in some ham to make it a chicken cordon bleu type of dish and luckily I threw in some spinach for my kids to eat and this dish was perfect! I loved it this way but it would be good with some spaghetti sauce on top too! 

Cheesy Chicken Bundles

4-6 small chicken breast, pounded to 1/4 inch thickness
6 ounces cream cheese, softened
1 cup fresh spinach, chopped finely
1 cup Mozzarella cheese
1/4 cup parmesan cheese
8-12 slices of ham
1 egg, beaten
2 cups panko bread crumbs
1 cup spaghetti sauce- optional
toothpicks

Heat oven to 325 degrees F. Mix cream cheese, mozzarella, parmesan, and chopped spinach together. Grab a piece of chicken and place about 2 heaping Tablspoons of the cheese/spinach mixture. Continue  until all chicken breast are done. Then take 2 slices of ham per chicken and place on top. Grab a baking dish and lightly spray with cooking spray. Roll up each chicken tightly and place a toothpick in. Place beaten egg in a bowl and the panko crumbs on a plate. Dip chicken in the beaten egg and then roll in panko bread crumbs. Place in a baking dish seam side down. Bake for 40 minutes or until chicken is done. Remove from oven and throw away toothpick. If you want you can serve with spaghetti sauce over top and sprinkle with more mozzarella.

Creamy Spinach Artichoke Dip

Spinach and artichoke dip is my absolute favorite. I will go to certain restaurants just for their dip even if I don't care for their main dishes as much. It beats any dip out there for me…which is dangerous.  This dip was no exception! Creamy and delicious! So when I received a large box full of food should taste good chips I whipped up some of this dip and sat down and ate it all! haha I know I am pathetic. Then of course I had to be the taster fork all the bags of chips they sent me and boy they are good! Totally live up to their name! The kettle corn were a perfect pair for this dip but my favorite were the salt and vinegar sweet potato chips never tasted anything like it and boy they were yummy.

Creamy Spinach Artichoke Dip

1 (10 ounce) package frozen chopped spinach
2 (13 3.4 ounce) cans artichoke hearts
1/2 cup sour cream
1/2 cup mayonnaise
1 cup grated pepper jack cheese
1 cup freshly grated Parmesan cheese

Preheat oven to 350 degrees F. Grease a 9x13 casserole dish with nonstick spray. Heat the spinach in the microwave oven on high for 5 minutes and squeeze dry. Drain the artichoke hearts and coarsely chop in a food processor. Combine all the ingredients except the jack cheese in a large bowl. Stir well. Scraped into the prepared casserole dish and sprinkle with jack cheese on top. Bake for 30 minutes. top with a dollop of sour cream and serve with kettle corn chips!

Fruit Salsa with Cinnamon Chips



Happy Cinco de' Mayo! We are off to a Mexican Fiesta in a little bit but I couldn't end the day without posting a recipe for one of my very favorite salsas. Fruit Salsa! The perfect summer treat! Serve it up with some cinnamon chips and it is absolutely amazing! If you have any Mexican type grocery stores they should offer these chips. Cant wait for you all to taste this yummy treat!

Apple Berry Salsa

2 medium granny smith apples
1 kiwi, peeled
1 cup strawberries, sliced
1 small orange
2 Tablespoons brown sugar, packed
2 Tablespoons apple jelly

Peel, core, and slice apples. Chop into tiny bits. Slice strawberries. Chop kiwi. Place fruit in a 1 quart bowl. Zest orange peel, and juice inside. Add zest, juice, brown sugar, and jelly to fruit. Mix gently and chill. Serve with cinnamon chips.

Kitchen "Pop of Color" Plus $100 GIVEAWAY!

A few weeks ago I was contacted by Wayfair to be a part of their "Pop of Color" campaign that they were doing! At the time I was meeting with different contractors to remodel my house and one of the exact things that I was trying to do was add a "Pop of Color" to my house. So when they asked if I would like to pick out some things that would add some color to a room in my home I knew I was on board! Plus they wanted to giveaway $100 credit to one of my readers so how could I say no! Shortly after the home renovations began…I have had different workers at my house for 5 days a week for the past 3 weeks. And for a person that lives a very scheduled life when I am home it has been a little rough. So nap times have been missed, very few sit down dinners with my family around the kitchen table have happened and piles of cement, sawdust, and paint have been spread through out the house. So the blog posts and decorating have been put on the back burner for a while. But luckily I was able to  kick the workers out for Easter weekend and have a fun meal with my family with my new Easter Dishes that were a absolute hit with my kids!



And since I have a food blog I figured that the best room to feature would be my kitchen. The first thing that came to my mind was a rug! There is nothing better then a new rug! I'm not gunna lie I spent hours and hours browsing different rugs on Wayfair I wanted way too many of them for every single room in my house! But for the kitchen I chose the Trans Ocean Ravella Disco Orange Rug and I think it added the perfect touch! 




I guess it did help that I got new floors and a backsplash haha but look at that vibrant rug to add some color to that area! I was shocked at the high quality of this little kitchen rug! I was out of town and when I got back and opened the package with the rug in it I was beyond thrilled with the pattern but especially the quality of the rug! And lastly I went over to the dining area to add a "Pop of Color!" My two favorite things to have in my kitchen is a fun tablecloth or table runner and a vase of fresh flowers! Those two things make me extremely happy! So since it is Spring those were the colors chosen! I was surprisingly shocked when my husband even commented on the table runner that I picked out! The Caribbean vase I got it huge and so pretty!


I did spare you before pictures of the kitchen table that I had before. This table was another new addition to the house. I love it but it doesn't look complete without that table runner and vase of spring flowers! My home is still a work in progress (and is currently being painted as I blog in my room) new decorations, artwork, and a chandelier will be hung by the end of the week to finish off the kitchen and then its onto the next room!
