Pasta salad will always remind me of my older sister for some reason. I don't know if its because she used to always ask my mom to make it for her when we were growing up or what! But for some reason every single time I make it I can't help but think about her! Pasta salad is one of those things that I feel is good all year around. But it is especially food during BBQ season!
Whenever I see a pasta salad at a BBQ or a family gathering I always go to it first and get a huge serving of it! I will admit that I don't make it as often as I would like. Maybe a couple times a year oh but when I do I just love it and cannot get enough of it!
This recipe is very versatile and whatever you like can be added into it. The main thing is that you marinade it in Paul Newman's Italian dressing. The longer it sits the better! So here is a list of a few ingredients that I like to add to my pasta salad!
colorful fusilli pasta, cooked according to box directions
broccoli, cut into bite size pieces
green, yellow, and red bell peppers, seeded and sliced thinly
spinach, washed and trimmed
purple onion, thinly slice
black olives, whole
Cook noodles according to the back of the back and rinse and drain under cold water. Place in a very large bowl and add all your toppings, cucumbers, tomatoes broccoli, peppers, spinach, purple onion, black olives and whatever else you may like! Then dump in a bottle of Paul Newman's Italian dressing and marinade all ingredients together overnight. Or as long as possible! Store in the fridge in a covered or airtight container.
