Loaded Cornmeal Waffles

Breakfast is probably my favorite meal to cook. And it definitely is my kids favorite meal to eat! Only problem is that sometimes we eat the same meal over and over again. We usually do sweet buttermilk waffles or pancakes. But then I gave these cornmeal savory pancakes a try! Exceeded my expectations for sure! They are a great savory with a little sweet breakfast that you need to add into the mix! And it is even better for breakfast for dinner or for Sunday brunch. 
 
The key to the recipe is use a good quality cornmeal and PAN is just that! It is a pantry staple in every home. It helps the waffles have the right texture! You can top these with syrup, a sunny side egg, or gravy.  They have great versatility! Any way you serve these they have a wonderful flavor and texture! You can make these as simple and easy as you would like to top them with gravy and an egg for a culinary exploration!

Loaded Cornmeal Waffles

Ingredients

  • 2 eggs
  • 1 1/2 cups milk
  • 1/2 cup plain yogurt
  • 2 Tablespoons butter, melted
  • 1 2/3 cup PAN Cornmeal
  • 1 cup flour
  • 1 1/2 Tablespoons sugar
  • 1 teaspoon salt
  • 1 Tablespoon baking powder
  • 1/3 cup chopped chives
  • 1 cup extra sharp cheddar cheese
  • 1 1/2 cups ground sausage, cooked

Instructions

    1. Preheat waffle maker.
    2. Then grab a large bowl and mix together eggs, milk, yogurt and butter. Add in PAN Cornmeal. Then shift in flour, salt, and baking powder. Stir in salt. Then mix in chopped chives, cheese and sausage.
    3. Grab a 1/3 cup of the batter and pour onto the waffle iron. Close and remove when your waffle irons light comes on or when it gets to how crispy you like your waffles. Serve with maple syrup or with a sunny side egg on top!
