Steak Cobb Salad

I love a good variety salad with different types of toppings. But sometimes I get on a certain salad kick and cannot get off of it! At the beginning of my pregnancy I could have eaten a wedge salad every single day. Well that has come and gone and now I am all about a yummy cobb salad. 

My husband and I like different things on our salads. So I love having a cobb salad where there is still plenty of things on the salad if you don't like a thing or two and have to take it off.

I always love have salads are so forgiving. You can make it your own. Add more of something or add less of something and you still have yourself a yummy salad! 

I have been loving blue cheese lately. Like I put double the amount on my salad and so I decided to stir in some blue cheese into my dressing. And left my husbands the way it was! So if you like blue cheese stir in some to the ranch dressing to take it up a notch!

Steak Cobb Salad
Steak, seasoned, grilled and sliced
Romaine lettuce, chopped
Cherry Tomatoes
Corn on the cob, shaved off
Snap Peas, cut in half
Blue Cheese crumbles
Hard boiled eggs, sliced
Avocado, pitted and sliced

Mix together and create your dream steak cobb salad with the measurements that you prefer! Top with this homemade ranch dressing!

Ranch Dressing
1 packet Hidden Valley Ranch Dressing Mix
½ cup light mayonnaise
½ cup light sour cream
½ cup buttermilk
¼ tsp. black pepper
¼ tsp. paprika
⅛ tsp. garlic powder

Whisk together or place in a jar and shake very well. 

*I stirred in about a Tablespoon of blue cheese into my dressing for this steak salad, but I normally just keep this ranch dressing on hand without the blue cheese mixed in*

7 layer Dip in a Jar

When I think of going to a Mexican fiesta or a party 7 layer dip always pops into my mind. And with the Super Bowl right around the corner party appetizers have been on my mind. So when I decided to do a fun collaborating with Stonyfield Organic Yogurt and Ball Canning Jars I thought about the picture make ahead of time appetizer that we could enjoy while sitting on the couch watching the bif football game! So a portable dip in a Ball brand jar sounded like the perfect thing!

I love to use Stonyfield Greek yogurt in place of sour cream in a lot of my recipes. It cuts down on the calories and tastes better in my opinion. To take this 7 layer dip to the next level I like to add taco seasoning to my Greek yogurt to give it an extra kick!

Also this dip is perfect to be made ahead of time. Especially since it is in the Ball brand jars. They can sit until the game starts while you run frantically around trying to finish everything else up! Then all you have to do is hand each person their personal serving of dip in the Ball jar and everyone is

7 Layer Dip in a Jar
yields 2 Ball pint jars

1 (15.25 ounce) can refried beans
1 cup Stonyfield Greek Plain Yogurt + 1 Tablespoon taco seasoning
1 cup prepaid or homemade guacamole
1 cup cheddar or Mexican blend cheese, grated
1 tomato, diced
1 small can of olives, diced
2 green onions, thinly sliced

Layer the Ball Pint Jar starting from the top of the ingredient list down to the bottom. (These measurements are ones that I used, however this recipe is very versatile and you can put more, less, or take out anything that you do not like)

Better Bakery Cheese & Pepperoni Pizza Melts with a Garlic Butter Dipping Sauce

In our family my kids are more likely to eat something when there is a dipping sauce involved. I don't think it is because the food they eat actually needs sauce to make it taste better but more of the fact that it is more fun to eat when you get to dip it! When I order pizza for our family my oldest son always wants some sort of sauce to dip his pizza or breadsticks in. There is a pizza place near our house that when we order it I have to have a garlic butter dipping sauce. And it was the perfect dipping sauce to pair with these Cheese and Pepperoni Pizza Artisan Melts. My kids have loved eating these for lunch, dinner, and for an after school snack!

Garlic Butter Dipping Sauce
yields enough for atleast 2 Better Bakery Cheese & Pepperoni Pizza Artisan Melts

8 Tablespoons (or 1/2 cup) butter
2 teaspoons garlic powder
1/8 teaspoon salt

Melt butter in a saucepan over medium heat. When the butter is completely melted remove from heat and use a spoon to remove the top foamy layer on top of the butter. Throw away the foam and then whisk in the salt and garlic powder. Serve immediately with Better Bakery Cheese & Pepperoni Pizza Artisan Melts prepared according to packaging!

Teriyaki Chicken Sliders with guacamole and pineapple salsa

The Super Bowl is right around the corner and I couldn't be more excited. Our family loves football and we love food even more. When I think of the perfect Super Bowl meal it contains nachos, potato skins, chicken wings, chips and dips, and of course sliders!

So when thinking of the perfect recipe to enjoy with family and friends during the super bowl these teriyaki chicken sliders topped with Sabra guacamole and pineapple salsa with a Sabra famers ranch spread came to mind!

Teriyaki Chicken Sliders with Guacamole and Pineapple Salsa

3/4 cups freshly chopped pineapple
1/2 cup diced tomatoes
2 Tablespoons chopped cilantro

4 skinless chicken breast tenderloins
2 cups teriyaki sauce (store bought or homemade)
4 slices pepper jack cheese 

8 slider buns, buttered, and slightly grilled until light golden brown
Sabra classic guacamole
Sabra farmers ranch greek yogurt dip

Place pineapple, tomatoes, and cilantro in a bowl; mix well and set aside. In a separate bowl place the chicken tenderloins and teriyaki sauce and marinade for at least 2 hours. 

Cook chicken over medium heat on a stove or on the grill for about 5 minutes. Make sure to test your chicken internal doneness to make sure it has reached 165 degrees F. Once chicken is done top with a slice of pepper jack cheese and let it melt. Cut each chicken tenderloin in half to create a more square piece of chicken to fit on the slider buns.

Grab the buttered slider buns and spread a Tablespoon of Sabra farmer ranch on each side of the bun. Then add a heaping Tablespoon of Sabra classic guacamole on the bottom side of the bun. Top with a piece of teriyaki chicken. Then top with a Tablespoon of the pineapple salsa. Serve immediately.
