Strawberry Tarts



I am a huge tart lover. Like if anyone was to ever bring me my favorite treat it would be tarts. I love tarts filled with pink lemonade filling, an assortment or fruit (kiwi is probably my fav in there) and these strawberry tarts. There are a little bit of a labor of love. Like sugar cookies...In my opinion. And of course those are my husband and my favorite things! I am not sure if that means that we are high matinance or just have good taste haha. But let me promise you that these tarts and the pink lemonade ones are worth every second! 

Strawberry Tarts

Shell:
1 cup shortening
1 cup sugar
2 1/2 cups flour
1 egg
1 teaspoon almond extract

Cream sugar and shortening. Add flour, egg and extract. Spread as thin as possible into individual tart pans. Place on a cookie sheet. Bake at 375 degrees for 12 to 15 minutes, or until light brown or the shine is all gone from the dough. (DO NOT OVERBAKE) Let cool for a few minutes before removing. Then tap gently and squeeze the sides of the tart pans gently until they come out. 


Strawberry Glaze
1/2 cup sugar
1 1/2 cups water
1 small box strawberry Jell-O
2 Tablespoons corn starch
Strawberries,washed, tops cut off and thinly sliced

Bring sugar, water, and cornstarch to a boil and cook until it turns clear. Take off from the stove and stir in strawberry Jell-O. Let cool; add fresh strawberries. Spoon into cooked tarts.

Chocolate Hazelnut Chocmeister Frozen Bananas

It has been over a month that my kids out been off for summer break. It has been a mad house of camps, activities, trips, and having more than my own kids in my house. I don't know about your kids but mine seem to always been hungry and always are bored. I have tried to get them all more involved in the kitchen this summer.

My oldest son is obsessed with chocolate hazelnut spreads. He grabs a spoon and digs right in! So when I got a package from Peanut Butter & Co he was all excited. Peanut Butter & Co has been in my pantry for years. I think they are actually one of the first companies that I started working with on my blog. So their packages are some of my favorites! 



He wanted to dig right in when I opened the package and so I grabbed these few simple ingredients and we had some fun! First of all just the packaging along on the CHOCMEISTER is the cutest!! Better yet it has less sugar and more protein then other chocolate hazelnut spreads. So it is a definite win win especially when my son does want to eat it by the spoonful! They even have a coupon for you all for $1 off that expires on July 31st! So make sure you use it ASAP! 

There is only a few simple ingredients so grab some bananas, sticks, some Chocmeister, and some toppings to decorate them with


Stick the stick in a few inches in the banana


Spread some of the Chocmeister all over the banana. If you need to thin it out place it in the microwave for 5 seconds at a time and thin it


Sprinkle with topping of choice



Cover them as much or as little as possible


Eat right away like my son! Or place in the freezer for frozen banana treats


Once Frozen they are easier to eat and can be enjoyed a little longer and less messy then eating them right away! 


My kids can even take them outside and enjoy them!



Chocolate Hazelnut Frozen Bananas 

3 ripe but firm bananas
toppings, coconut, peanuts, sprinkles,etc

Peel the bananas and cut them in half crosswise. Stick in a stick, popsicle stick, or lollipop stick. Place parchment paper down. Thin the Chocmeister in the microwave if needed by placing in a microwave safe bowl and microwaving in 5-10 second increments. Spread the chocmeister on the banana or roll it in it. Top it with toppings of choice. Place in freezer for atleast 30 minutes to firm up! Then enjoy!

Old Fashion Onion Rings



I absolutely love onion rings! When I am at a restaurant and I see onion rings on the menu I also have to scope around and see if I spot any old fashion onion rings! I love thick onion rings! When I thinking of a fun Father's Day recipe with Krusteaz I was thinking about one of my favorite products of theirs. Their cornbread! My husband is OBSESSED with cornbread and we always have theirs on hand! 

So thinking about my husband, Father's Day, and Krusteaz I knew I needed to use the cornbread in a recipe to celebrate Father's Day and since I had had onion rings 3 times that week I decided to give these a try! And Krusteaz cornbread was the perfect way to create the thick old fashion onion ring that I was going for! 



Old fashion onion ringS

1 box Krusteaz Southern Cornbread Mix
1 1/3 cups buttermilk or milk
2 eggs
1/3 cup oil
1 cup flour
3 yellow onions
water
peanut oil

Crockpot Cheesy Chicken and Rice




I use my slow cooker all year long but even more so during the summer! Days during the summer with all my kids home are long and hot! By the end of the day I can't even think about heating up my whole house by turning on the oven! So slow cooker it is! 

My husband isn't a huge pasta fan. I still make pasta but my husband would choose rice over pasta every. single. day! I love this rice from Rice Select. I really liked the shape and texture of the long grain rice. I noticed when I opened the container that it had a different type of smell then other brands of rice that I use. It kind of smelt like popcorn! haha I tried a bite of the rice before I mixed it in to see how I liked the flavor. And the verdict was that it tasted great all by itself!

Slow Cooker Cheesy Chicken and Rice

4 boneless, skinless chicken breasts
2 cups chicken stock
2 can cream of chicken soup
1 medium onion, diced
2 cup shredded cheddar cheese
1 (15 oz) can corn, drained

In a crockpot place seasoned with salt and pepper chicken breasts. Place chopped onions on top of the chicken then pour in the cream of chicken soup and the chicken stock. Cook on low for 7-8 hours. Prepare the Rice Select Texmati rice as directed on back of the box. Then once chicken is cooked place on a plate and shred chicken. Then return chicken to the crockpot. Then mix in the rice corn and most of the cheese. I like to leave a little cheese out to sprinkle on the top. Mix well and keep in crockpot until cheese is melted over everything. Then Serve!

Acai Smoothie Bowl and a {GIVEAWAY!}



A few months ago I was approached by Stonyfield Organics to do a collaboration with PrAna. I had just had my baby girl and knew that it would be a chance to give myself a goal of something that I would like to fit in come June when my baby would be 4 months old. I have always loved the quality of their clothing but had never purchased a pair of jeans from them. As a mom of a new baby we all set "jean goals" of pants that we want to fit into when the baby weight starts to come off! So I jumped on this offer and set a goal. 

Part of achieving a goal to fit into those pants is making healthier food choices. I am always more hungry when I am nursing then when I am pregnant. I don't know what it is but I just eat way more. So making healthier food choices plays a big part in getting the right kind of calories for me and my baby girl!



Stonyfield products have always helped me make healthier food choices by how yummy their products are. I have been loving their whole milk greek yogurts and so does my whole entire family! I mixed their blueberry whole milk Greek yogurt in my acai smoothie bowl and it was the perfect way to start my summer day of swim team and basketball camp!

Acai Smoothie Bowl
1 (3.5) package frozen Acai puree
1 cup frozen strawberries
1 banana
1/2 cup fresh blueberries
1/2 cup spinach
1 (5.3 ounce) container Stonyfield Greek yogurt (I used blueberry)
1/2 cup almond milk 

optional toppings:
granola
fresh fruit
shredded unsweetend coconut

Combine all ingredients in a blender. Pour into a bowl and top with fruit, granola and the shredded coconut.
