Sunshine Muffins

 
These muffins right here are packed with all kinds of deliciousness! They are moist from the carrots and raisins and crunchy from the apples and nuts. These muffins aren’t your average muffin they are so much better! These muffins are the perfect way to start your day and will sustain you for a lone time! Plus they are a perfect way to sneak in some fruits and veggies into your diet!

Ingredients

  • 3 eggs
  • 1/2 cup oil
  • 2 teaspoons vanilla extract
  • 3/4 cup sugar
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 cups carrots, grated
  • 1 cup organic sweet apples, finely chopped
  • 1/2 cup raisins
  • 1/2 cup Diamond chopped walnuts or pecans

Instructions

    1. Preheat oven to 350 degrees F.
    2. Combine all ingredients except carrots, apples, raisins, and nuts; mix well. Once all ingredients are mixed well stir in the carrots, apples, raisins, and nuts.
    3. Grab some muffins tins and grease them.
    4. Then fill each muffin tin about 3/4's full.
    5. Bake for 15-18 minutes. Remove from muffin tins and let cool. Then enjoy!
